You can eat your way to gorgeous, clear skin and women in France have a secret up their chic sleeves that we have decided to borrow. This recipe can be made in the evening and enjoyed for lunch and supper for a couple of days.
Skinny Pot au Feu
This is a pared down version of the classic stew, ‘pot au feu’ which was traditionally served with huge hunks of beef, cheese and baguette. We have stripped this down to just the basics, which are vegetables and water. But, that doesn’t mean that this simple soup is lacking in taste.
If you’re feeling a bit low on nutrients, or as if your skin could do with a boost, try eating a bowl or two a day for a week, before your usual meals. Kids and adults love it, and it’s particularly helpful for teenagers who are going through a spotty phase. It has been known to clear up teenage skin within a week. Just sneak it onto the table and insist that they eat it before their main course. The great thing is that it fills you up, so you’re less likely to tuck into dessert.
2 small onions
3 large carrots
3 large celery sticks with the leaves
5 good carrots
2 small but firm turnips
1 vegetable stock cube
Just under 1 litre of water, but simply ensure that all the vegetables are covered with water.
A sprinkle of peas, navy beans, or something like lentils – if you wish. You can also add one potato if you want, which will thicken the soup, although it’s just added calories, so keep that optional.
You can use bay leaves, thyme and parsley to season.
Slice up the lot and put everything in a large pan on the stove and bring to the boil. Simmer for twenty minutes. Once cooled, use either a handheld plug in whisk, or even your food processor to whizz into a smooth soup. Ideally, the soup will be not too watery, but not too thick either. If you want, you can add in a swirl of crème fraiche before serving.
